I am putting two sponge cakes in the oven right now.
8 eggs
1 cup of sugar
1/3 cup cocoa
2/3 flourvanila
- Using a Kitchen Aid, beat the eggs at full speed until really foamy
- Reduce speed and add sugar and return to full speed... the mixture will deflate and go right back up after a few minutes
- Reduce speed and add flour slowly
- Add vanilla
- Place in a buttered and floured pan.
- Bake at 375F for about 42 minutes or until done
